Homemade Lime Extract

I want to make lime extract today. I think it would taste amazing in tangy shortbread cookies speckled with little bits of lime zest. I found two different recipes for lime extract, and I may try both of them for comparison. Can’t have too much lime anything around.

The first procedure is to zest one Persian lime, chop up the zest, and infuse in vodka. The second is to microplane 10 key limes and infuse in Everclear. I don’t have a microplane or Everclear. Or ten key limes. I tried the first recipe and was underwhelmed with the result, except that the colors are so pretty I had to share them. I think the 10-lime version would yield a much stronger flavored extract. Then I could try out this recipe for key lime sables.
