Applesauce Muffins

Slightly sweet, whole-grain, spiced muffins.

Applesauce Muffins
makes 12

2 cups whole wheat flour
1 tsp. baking soda
2 tsp. cinnamon
3/4 tsp. salt
1/2 tsp. nutmeg
1/8 tsp. cloves
1/2 cup vegetable oil of choice (I used canola)
1/2 cup sugar
1 egg
1 1/2 cup applesauce
1 cup chopped pecans

Combine ingredients from flour to cloves in a medium bowl. Combine oil, sugar, egg and applesauce in another and mix well. Add dry ingredients to wet and stir just until combined. Stir in pecans.
Spoon into 12 oiled or paper-lined muffin cups and bake in a 350 degree F. oven until the centers of the muffins spring back when pressed gently, about 23 minutes or so, depending on the heat of your oven.


If you’re feeling decadent . . . cream cheese icing.
