These waffles are the most bread-like recipe I’ve come across in my grain-free journey. They won’t get crispy for you, at least mine don’t, but they’re very good indeed.
Grain-free Waffles
6 eggs
1/2 c coconut flour
1/4 tsp baking soda
1/2 tsp salt
2T honey or 2T water and 3 fake sweetner
1. Toss it all in a blender and buzz it. (Coconut flour is notoriously hard to mix without a blade.)
2. Coconut flours seem to vary in density, so this recipe may not be thin enough. Add water by tablespoons to make the batter barely pourable. I’ve tossed in an apple or other puree for the same effect.
3. Cook in a waffle iron until golden brown.
4. Enjoy. Makes great sandwiches too.

I read every post on your blog, but when I saw this, I thought, “Yeah, right. I’ll never need this, ’cause I’m NOT giving up grains.” After all, I have hundreds of pounds of wheat in my pantry, and a gorgeous mill that I use to grind my flour by hand. I was HEAVILY invested in wh0le wheat.
Yeah, never say never. LOL As of a few weeks ago, my husband and I went grain-free. Our girls still eat some, but I’m trying t0 wean them off the grains as well, with mixed results. I remembered this recipe this weekend and decided to give it a try. SMASHING success. The girls even asked for seconds.
