Got too much overblown zucchini? Then like me, you’re looking for anywhere to use it. Here’s my new favorite.
Egg in a Zucchini Basket
1. Slice overgrown zucchini very thickly.
2. Cut seeds out of the center and cook over med-hi in olive oil.
3. When almost tender, crack an egg in the center. Cook until browned.
4. Using a large spatula, flip and cook to desired egg doneness.
5. Serve.

Just yesterday here in the office we were talking about what to do with all the zucc’s in abundance… and then learning about your site I come upon this mouth-watering photo for a great idea! Eggs contain sulfur and I’ve read that most Americans suffer with low levels of sulfur causing a multitude of illnesses … check out Weston A. My husband and I made these and we love it! We did it your way, but with cheese on it and then we made it with scrammbled eggs with sausage in it with cheese on top. It was fantastic! Thank you!
Oh my – you’ve made me a happy girl. I just did zuch pancakes with cheese in them. Yummy – now I want this with the local duck eggs.
