This is one of those I-haven’t-had-grain-in-so-log-I’m-dying recipes. It’s NOT something you’d eat if you could have real oatmeal. It’s gritty and sticks in weird places in your mouth, but if you’re missing hot cereal as much as I am, it’ll do.
You’re basically going to make a soupy muffin batter and cook it on the stove instead of the oven.
1. Whisk together 2 eggs, 2T coconut flour, 2T melted butter, 1/2 to 3/4 c water, two generous squirts of honey, pinch of salt, optional raisins until smooth.
2. Cook in sauce pan over med to med-hi, stirring once it starts to solidify.
3. Once water is absorbed, top with coconut and nuts.
For an egg free version, boil water, salt, and raisins. Add coconut flour, cook and stir until thickened. Add butter, nuts, honey, etc. Just depends on how weird your tastes have gotten since you last had grain…

thanks… this was very satisfying for me. I hadn’t had breakfast cereal in a very long time bz of allergies, and this was satisfying.
