Ever woken up early on a weekend, everyone else is still asleep, and you think, “Pancakes sound really good right now.”
But you don’t want to stand at the stove for thirty minutes making a whole batch of pancakes that will be cold by the time everyone else is up, so you don’t do it. For one thing, while leftover pancakes are better than no pancakes, they aren’t the same as hot-off-the-griddle pancakes. For another thing, the thought of all that standing and flipping is disheartening when what you really have in mind is sitting and pancaking with a hot cup of something and the newspaper.
Behold, the single serving pancake recipe. There are usage instructions for this recipe that don’t come with most recipes.
1. If you have one, use the vent hood over your stove to keep the sleeping people from smelling the pancakes.
2. Immediately wash, dry and put away the mixing bowl, skillet and utensils used to make the pancakes.
Because the only thing worse than not having pancakes is getting caught not making enough for everybody.
Personal Banana Nut Oat Pancakes
serves 1
1/4 cup whole wheat flour
1/4 cup rolled oats
1 tsp baking powder
pinch salt
1/2 tsp cinnamon
1/2 medium banana
1 egg
1/4 cup milk
1 tsp olive oil
2 T chopped toasted pecans or other nuts (optional)
Combine flour, rolled oats, baking powder, salt, and cinnamon. In a separate small bowl, mash 1/2 banana, blend in egg, milk, and oil. Add to flour mixture and blend. Add a little more milk if you prefer a more liquidy consistency.
Heat a skillet or griddle over medium heat and lightly oil. Pour batter to your preferred pancake dimensions onto the skillet when the skillet sizzles gently when you touch a bit of batter to it. Sprinkle the top of the pancakes with the nuts.
Depending on the size of your skillet, you may be able to make all the pancakes in one batch or it may take two. Flip when pancakes show bubbles and slight browning on the edges. (I also peek underneath to check for the perfect golden brown color).
Serve with a few slices of banana and maybe a sprinkle of pecans as well as your favorite pancake toppings.
And remember, get rid of the evidence.

Y’all are making me look bad. I really do this and am beginning to see just how heartless I am.
You may already know this trick, but just in case…
I used 4 cast iron pans on the stove at one time – and I doubled the normal recipe. That way, I had enough to freeze for other breakfasts – I’d just reheat them in the microwave or toaster oven. By using 4 pans, you can cut down on the time you spend over the stove. I don’t think it took me 30 minutes to make and cook about 20 pancakes at a time.
Kids are all gone now and it’s just me, so this recipe will be a nice thing to have handy. Thanks for sharing it.
And about being “heartless”…mommy needs treats sometimes, too. Kids get stuff at school and at friends’ houses. They get time with their friends and to play. Daddy gets lunch at work, while talking to adults. He may even get to eat out. Mommy gets to eat whatever is left over on the kidlets’ plates while she clears the table and wipes up the spills on the floor and cleans off the kids and then washes up the dishes. THEN, she can start dinner, referee kids, reboot the laundry, change diapers, argue with the kids about picking up some of the mess they’ve made that morning.

Recipe sounds lovely and I love the idea of getting rid of the evidence! And I think you do need to be just a little bit selfish sometimes. You can’t look after everyone else if you don’t look after yourself – physically and mentally.
I would absolutely do it. My husband doesn’t know he’s in the world until 10am to noon, and I’ve learned that if I wait for him to get up I won’t ever get pancakes. So, yes, this is great! When I cooked breakfast in a small-town cafe, we made a good batch of pancake batter and kept it in the fridge between pancake orders. So I’m thinking that might work at home also. If hubby smells pancakes but doesn’t want to crawl out of bed to get them, let him cook up his own for his lunch. No children here, just us old folks.

Toasted Pecans. What a great idea! I had never thought of combining Pecan nuts into a pancake. This could be a sure fire hit. The crunchy taste of tossted nuts is just what the kids would love. Right, off to buy Pecans then!

I am with those that would never in a billion years get away with this. If I put the washing on then no-one would come running but food? My poor wee starving darlings would be there in no time, offering ‘help’ ( Oh, you don’t want to know how much longer that takes!).
However, I am tempted to hand over the recipe and demand breakfast in bed with coffee and a newspaper. I will probably end up making boats out of the paper but hey-ho!

I loved this post! Too funny and oh-so-true! However, I do leave my extra gluten free pancake batter in a large glass measuring cup for my hubby to use. Since we’re both gluten intolerant I’d feel too guilty not to share. But this DID make me snicker a little bit. 😉
